Peach Gazpacho Shooters #KitchenMatrixCookingProject

These fun summer Gazpacho Shooters are filled with fresh peaches and vegetables.  You can add some vodka for a festive, adult version.


They are the perfect start to your next al fresco dinner party.....



I am posting for this week's version of The Kitchen Matrix Cooking Project with my friends, Cam of Culinary Adventures with Camilla and Karen of Karen's Kitchen Stories.


This week's assignment was Gazpacho.  Bittman, the author of the Kitchen Matrix Cookbook, offers ideas for 12 different Gazpachos.  I didn't use any of them.  They did, however, inspire me to think outside of the box.  I think that qualifies this recipe to be posted with the others today.


I have a confession to make.  I don't like Gazpacho.  I also don't like tomato juice, Bloody Mary's, V8 juice, etc.  I love all the ingredients in those things.  I use V8 and tomato juice in many recipes.  Just don't hand me a glass of it and expect me to drink it.


Bittman offered a lot of different ideas for Gazpacho.  He offered 6 ideas for green gazpacho and 6 for red.  The versions that appealed to me the most contained fruit.  I had just bought some peaches so, for the heck of it, I googled Peach Gazpacho and found this recipe from a site called the chalkboard. It was mostly peaches.  And Vodka.  



Who can say no to vodka?  Not I.  These made a great start to a dinner party.  I served the adults their shooters, spiked and chilled.  I served the toddlers little shooters sans alcohol.

The verdict?  I thought they were okay.  The decision was split, with some liking them, some taking a sip and setting it aside and some going back for seconds.  One of the toddlers went back for thirds! She loved these peachy drinks.

Of course, you could also omit the alcohol and serve these up as a traditional Gazpacho.

Served as shooters, it was a very elegant start to a dinner party.  They are summery and fun.  I may play with the idea a little and see what other flavors I can combine.  

I'm going to start by looking at what Karen and Cam made.

Peach Gazpacho Shooters

These fun summer Gazpacho Shooters are filled with fresh peaches and vegetables. You can add some vodka for a festive, adult version.

ingredients:

3 lg. peaches, peeled, pitted and cut into chunks
1/2 of a lg. cucumber, cut into chunks
1 red pepper,  seeded and cut into chunks
1 c. loosely packed basil leaves
1/2 c. of the best extra virgin olive oil you can afford
Juice of 2 lemons
3 Campari tomatoes, cut into chunks
salt and pepper, to taste

instructions:

Place all of the ingredients into a heavy duty blender and pulse until coarsely mixed.  Let stand in the blender for 20-30 minutes to rest and allow the flavors to meld.  

After the resting period, puree the mixture until smooth.  Refrigerate until well chilled.  Divide the Gazpacho into two batches if you want to have both virgin and alcohol laced versions available.  Add desired amount of vodka to the portion you have reserved for that purpose.  Pour into shot glasses and serve well chilled.

Alternately, you can omit the alcohol and serve these up as traditional gazpacho in a bowl.

  1. I love that you used the matrix for inspiration and went completely off on a creative tangent of your own. That's fantastic. Besides you can't say 'no' to summer peaches...or vodka. Cheers.
