Tropical Mahi-Mahi Salad #FishFridayFoodies

This gorgeous salad full of the flavors of the Tropics and topped with perfectly grilled Mahi-Mahi is the perfect summertime meal enjoyed al fresco poolside.

As my regular readers may remember, we just got back from a dive trip to Grenada.  We had a wonderful time and it ended much to quickly.  Since I have been back, I've been preparing and serving dishes that remind me of the Islands so when Sid asked for a salad my mind went immediately back to the Tropics.


I sliced up some fresh pineapple and placed it on the grill pan with some mahi-mahi fillets that I seasoned with a bit of Old Bay Seasoning.  Placed this on a grill over med high heat with the cover closed for about 5 minutes.


This gave me time to prepare the mango, strawberries and avocado.  I also took this time to make the salad dressing.


I went out, flipped the pineapple and fish, closed the lid and came back inside.  I had enough time to dress the greens and divide them between 2 plates.


I retrieved the pineapple and fish from the grill, came inside and arranged the fruit over the greens.


The final touch was placing a on top of each salad and then adding another drizzle of the dressing over all.


Perfect Recipe Folks....Easy Peasy and Delicious.  Great for those busy weeknights when you need to get dinner on the table fast or for those relaxing nights when you can sit outside and enjoy the evening with this colorful salad and an icy cold rum punch.

Tropical Mahi-Mahi Salad

This gorgeous salad full of the flavors of the Tropics and topped with perfectly grilled Mahi-Mahi is the perfect summertime meal enjoyed al fresco poolside.

ingredients:

2 Mahi-Mahi fillets (about 4 oz. each)
Old Bay Seasoning, to taste
1 pineapple, peeled and cored
1/2 mango, peeled and sliced
1 avocado, peeled, seeded and sliced
10 strawberries, hulled and halved or quartered, depending on size
5 oz. mixed field greens
1/2 c. avocado oil mayo (or your favorite mayo)
1/4 c. sugar
2 T. pineapple juice 
1 T. poppy seeds

instructions:

Cut the pineapple into 1/2" slices, retaining juice.  Place 4 slices onto a grill pan.  Reserve remaining pineapple for another use.  Measure 2 tablespoons of pineapple juice and set aside.

Season the Mahi-Mahi with Old Bay Seasoning and place on grill pan with the pineapple.  Place onto a med hot grill and close the lid.  Let cook for about 5 minutes.  Flip the pineapple and mahi-mahi and continue to cook with the lid closed for another 3-4 minutes, until fish flakes easily with a fork.

Meanwhile, whisk together the mayo, sugar, reserved pineapple juice and poppy seeds.  Place field greens in a large bowl and toss with some of the dressing, according to taste.  Divide the greens between 2 plates.  

Arrange the fruit over the greens.  Cut the pineapple into bite size pieces and divide between the salads.  Lay a fish fillet over the top, drizzle with some more of the dressing and serve.

  2. That's two recipes with grilled pineapple. Too bad I sliced up our pineapple for dessert last night. Time to head to the store and pick up another. Thanks for the inspiration.

    1. I love grilled pineapple. I can't eat raw because it makes my mouth hurt but I can throw it on the grill and eat it all day long.
