Typical Tuesday

We are home from our long weekend away and life is quickly back to normal with a little difference because we brought Spence home to stay for a couple of weeks.

The dogs awoke us early this morning, very happy to have us home.  We got up, took care of the animals, made some coffee and got moving early because Spence has Tae Kwon Do camp for three days with Lifecare Martial Arts Center.  Spence is very involved with TKD at home and is currently a red belt.  We are very proud of him.

Once Spence was dropped off and settled in, I picked up Kim and we went to visit Mom.  Mom was very happy to see us.  She, Harriet, Kim and I sat in Mom's "living room" and visited where we were joined by 2 more of Mom's "gang".  We only stayed about an hour and then left because Tuesday's are Communion and prayer service mornings and Mom wouldn't want to miss that.

Before leaving for the weekend, I had picked up some bananas for my friend, Karen, who was house and dog sitting.  Karen ended up having all of her meals at Kirsten's house so here is what my bananas looked like today.


I decided that for today's Try it Tuesday recipe, I would look for one in which I could use these bananas.  I grabbed The Complete Dessert Cookbook from my shelf and shuffled through until I found a recipe that was not only super simple but one for which I had all the necessary ingredients on hand.


Whipped it together in a flash and threw it in the oven for an hour.  Luckily it is only in the high 60's here today so it didn't preclude using the upstairs oven.



4 Banana Pound Cake
slightly adapted from The Complete Dessert Cookbook

1 pkg. yellow cake mix
4 eggs
1/3 c. canola oil
4 ripe bananas
1/2 c. water
1 sm. package instant vanilla pudding
1/2 t. cinnamon
1/2 t. fresh nutmeg, grated

Place all ingredients in large bowl of stand mixer, fitted with paddle attachment.  Mix on low speed until combined, raise speed to medium and continue beating for another 3 or 4 minutes.  Pour batter into a bundt pan that has been treated with baking spray.  Bake at 350* for one hour or until a wooden skewer inserted in the thickest area of the cake comes out clean.  Cool for 10 minutes before removing from pan.  Print Recipe


It looks good and it smells good.
Now I just have to figure out how I want to serve it...
I could just sprinkle it with powdered sugar and be done.
I could top it with ice cream, pineapple, hot fudge and whipped cream.
I could just use the whipped cream.
Or just the chocolate....chocolate and bananas....mmmmmmmm.


Final decision......
Banana Pound Cake, Vanilla Ice Cream and Sanders Hot Fudge.
LIFE IS GOOD!

  1. Man, that looks wonderful. I always freeze my overripe bananas (I buy 3 or 4 more than I think I need so they will get darker) to use for smoothies and that delightful "healthy frozen banana ice cream" that is all over Pinterest...so good!!!
