Yep, I'm home....

This afternoon, Mom and I went for a massage.  On the way there, Mom asked repeatedly where we were going.  I would tell her we were going for a massage and she would say she never had one.  I would tell her that she has had many and she would ask where we were going.  Then the conversation would start over again until we got there and then Mom remarked how she had been here many times.

Mom had her massage first and I went for a two mile walk.  When I got back I read for a while until Mom was done.  Mom moans and groans through the entire massage, saying repeatedly how nice it is.  When it was my turn, I seated Mom on the lounge chair with her water and a magazine.  Mom proceeded to read all the headlines to us as I got my massage.

On the way home Mom talked about how wonderful she felt and then asked if Frank got his hair cut there too???  Oh well, at least she felt wonderful LOL.

Once we got home, I started dinner, during which she repeatedly expressed concern that "those people" that she lived with were going to be worried about her if she didn't go home for dinner.  I finally convinced her that "those people" knew she was with me and they would not be worried.

Today was a "let's look in the refrigerator and make dinner" kind of day.  I had some Spaghetti Sauce that Frank had made and we had frozen.  I sauteed some mushrooms that were in the fridge to go into the sauce. The lettuce had turned so it went out to the chickens and I made a This and That Salad.


A This and That Salad is one in which I open the fridge, grab whatever is in the produce drawer, toss it into a bowl with whatever dressing I have on hand.  It always turns out delicious. I am including the This and That Salad that I made today but feel free to use whatever you have in your fridge and pantry.

This and That Salad
Half a head of cauliflower, florets removed from stem
4 miniature sweet peppers (yellow, red and orange), sliced
half of a cucumber, peeled and diced
A handful of mixed dried berries
1/3 cup shredded Monterey Jack Cheese
A handful of Roasted Pepitas (shelled pumpkin seeds)
Dressing to taste ( I used Tastefully Simple Vidalia Onion)

Toss all ingredients into a bowl.  Add dressing to taste.

I also found a roll of Pillsbury Pizza Crust in the Refrigerator so I decided to make a Cheesy Pizza Bread to go with the Spaghetti.


I spread some butter over the dough, sprinkled garlic powder over the top and sprinkled some shredded Mozzarella Cheese that I had leftover on top of that.


I rolled it up, tucked under the edges, and scored it along the top.
Then I brushed it with melted butter and sprinkled it with Parmesan Cheese.


I baked it at 400* for 15 minutes.

Cheezy Pizza Bread
1 can Pillsbury Pizza dough
2 t. butter, softened
2 t. garlic powder
1/2 c. shredded Mozzarella cheese
1 T. butter, melted
1/4 c. Parmesan cheese

Preheat oven to 400*.  Unroll pizza dough and place on baking sheet.  Spread melted butter over dough and sprinkle with garlic powder and mozzarella.  Roll the dough width wise and tuck the ends creating a loaf. Score the loaf with a sharp knife and brush with melted butter.  Sprinkle with parmesan cheese and bake for 15 minutes, covering with foil if the bread starts getting too browned.  Print Recipe

  1. I think I could handle anything with that Cheesy Pizza Bread by my side....maybe that's why I'm getting fatter and fatter!!! Welcome home!

  2. I have the same problem. Staying home and taking care of Richard finds me more in the kitchen cooking. And I eat when I am stressed out. I wonder if I will ever find enough energy to take off some of this weight! That bread looks delish!

    1. Yes and then another problem is that you have to cook so that it is appealing to them. For Mom this means muffins and gravy which translates to lbs. for me. Not to mention that it is proven that stress makes you retain belly fat. I look more pregnant than Ting LOL

  3. I'm glad you and your Mom enjoyed the massages. My mom and I make sure to get massages on a regular basis. It helps the both of us relax after a stressful week. It has been a celebrated tradition to get massages together ever since the first time we had them. I'm hoping it becomes the same for you. Anyway, that cheezy pizza bread is mouthwatering. I'm honestly wishing I could just grab it from my computer screen and gobble it up! Haha! :D

    1. Thanks for stopping by Ervin. Yes, I tried to get Mom massages at least once a month. She is now in a memory care center and I have arranged for those monthly massages to continue in there.
